Legislation requires certain food businesses in the hospitality and retail food industry to have at least one nominated Food Safety Supervisor (FSS) on the premises.

The Food Safety Regulations require the proprietor of a food business to ensure that food handlers are supervised and instructed and/or trained in food hygiene matters corresponding with their work activities.

This unit applies to frontline operational personnel who work under supervision and guidance and operate within predefined organisational food safety procedures. This function is undertaken by a diverse range of people, such as cooks, chefs, catering staff and kitchen hands, food and beverage attendants, cafe and fast food outlet cooking crew and sales people, and owner-operators of small business catering operations or retail food outlets.

This unit describes the performance outcomes, skills and knowledge required to handle food safely during the storage, preparation, display, service and disposal of food within a range of service industry operations. It requires the ability to follow predetermined procedures as outlined in an organisation food safety program.

The course looks at the legal requirements in relation to the NSW food act, the guidelines of HACCP and the responsibilities of venues to implement Food Safety Plans (FSP) and Standard Operating Procedures (SOP).

  • Identify potential hygiene risks and look at ways to minimise or remove the risk in accordance with legal requirements
  • Learn how to report and document incidents or risks to comply with legal requirements

The above course will be conducted by fully accredited industry professional trainers.

The legislative requirement for a business to comply with the national standard for food safety practices, along with training and certification requirements differ between state and territory governments.

Upon successful completion of the course participants will receive:

  • Statement of Attainment: Use Hygienic Practices for Food Safety (SITXFSA001)
  • Statement of Attainment: Participate in Safe Food Handling Practices (SITXFSA002)
  • NSW Food Authority Food Safety Supervisor Certificate

Please note: It is a requirement for the Use Hygienic Practices for Food Safety (SITXFSA001) course to be completed prior to Participate in Safe Food Handling Practices (SITXFSA002).
